2019 spring pick, 5g / 110ml gaiwan

Rinsed twice, first proper steep at 8s. Bright and a little sharp early on, settles into something rounder by the fourth infusion. Pushed it to eleven steeps before it really thinned out.

Would revisit — needs another year or two to soften.

Dan cong oolong

Mi lan xiang, roasted batch

Honey-orchid aroma was there but muted next to the roast. Steeped a touch long on the third round and it turned slightly bitter — dropping to 5s steeps fixed it for the rest of the session.

Sencha

First flush, cold brew overnight

Cold brewing solved the bitterness problem I keep having with hot water and this particular leaf. Twelve hours in the fridge, strained in the morning. Sweeter than I expected, almost no astringency.
